Easy Summer Gazpacho Recipe
What could be more refreshing in the summer heat than a nice cold cup of gazpacho? Gazpacho is a cold soup made of raw, blended vegetables and hits the spot when temperatures are climbing. Not to mention, gazpacho is full of good-for-you ingredients, so in addition to a tasty meal, you’re also reaping the health benefits that come with it. Save this easy summer gazpacho recipe for your next meal prep or backyard party.
What you’ll need:
Serves 4-6
- 1 cucumber, halved and seeded (don’t peel!)
- 2 red bell peppers, cored and seeded
- 4 tomatoes (We like Roma or plum)
- 1 red onion
- 3 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup white wine vinegar
- 1/4 cup olive oil
- 1/2 tbsp kosher salt
- Freshly ground black pepper
How to make the gazpacho:
- Roughly chop the cucumber, bell peppers, tomatoes, and onions into 1-inch cubes.
- Add the vegetables to a food processor and blend until coarse. Be careful not to overblend!
- Move the vegetables into a large bowl and add the garlic, tomato juice, white wine vinegar, olive oil, salt, and black pepper. Mix until combined and add more seasoning if you need it.
- Allow to chill in the fridge for at least 3 hours before serving.
The longer gazpacho chills in the fridge, the more the flavors will develop. If serving to a party, we recommend making it the day before to allow it to chill in the fridge overnight.
How to serve gazpacho:
When serving gazpacho, we recommend topping it with a drizzle of olive oil and a pinch of flaky salt. Try it with fresh shrimp or crab and some crackers on the side – you won’t be disappointed!
